I don't know if anyone has already privately responded for you, but here are a few things:
Are the players beginners or intermediate?
If your violin/cello are intermediate, keep it in the key of C major.
For the violin, just have them play the melody/soprano line. That's what violins do. As far as cello, just take the melody line and put it an octave lower, although I am not a cellist, so maybe someone else can weigh in on this too....
If the players are beginners, you may need to change the key to a beginner-friendly key, such as D major. This is simple to do on lds.org:
Go to lds.org to the Children's Songbook and look up "Search Ponder and Pray." On the left hand side, there are options to tinker with the song. Change the key to A major, D major, or G major. Beginning string players learn a certain finger placement pattern and A major or D major are the first melodies they usually do. However, this will change the pitch of the song for your singers if they sing along. It may put the song into a higher or lower register.
