I've used the Sibelius scoring program along with Photoscore Professional music scanning program for quite some time. Sibelius comes with a 'Lite' version of Photoscore and so you can get some idea of the problems that may lie ahead for you should you have a real need to scan in music.
Those problems are many as music scanning, although having been around quite a number of years now, is still not a technology that has not matured in pace with others. You will have to have a scanner that is suitable for the job and unless you are very lucky, get to know all the elements and variables of the scanning process to enable you to obtain a suitable scanned result that doesn't require you to do extensive editing afterwards.
If you Google the Photoscore site (Neuratron) you can probably download a demo copy. Don't get romanced by advertising copy and make sure that you scan your own material. Also make sure that you scan a variety of score sizes and types (handwritten, photocopies etc.)
I have to say that at one time I found it quicker to hand input scores into Sibelius rather than scan them and have to do extensive editing.
I would also point out that these scanning programs can also work with scores that have been made into .pdf documents. So if your music source happens to be internet pdf's then you won't need a scanner. You may also find (via Google) that there are cheaper programs out there that will convert pdf's to 'music'..... how about 'PDFtoMUSIC'? This may obviate the need for the two have two expensive programs (Sibelius/Photoscore)
A bit of research is needed, unless money is no object?
